After a few different conversations with people, I’ve decided to try and do a double menu in the one shop. I have a feeling I will need to go back for a few little things this week. But fingers crossed I make it.

Mon: Noodle & Wii night with Rachel and Aaron (was to be Thai Beef Salad)

Tues: Shepherd’s Pie (probably babysitting tonight)

Wed: Roast Potato Salad

Thurs: Tomato & Lentil soup

Fri: Porcupines (mince and rice cooked in tomato sauce stuff)

Sat: Massaman Curry

Sun: Left Overs

Mon: Kebabs

Tues: Enchiladas

Wed: Chicken Pizza

Thurs: Garlic & Prawn Stir-fry

Fri: Macaroni & Cheese

Sat: Toasted Sandwichs (cheese & Corn)

Sun: Left Overs

So that’s the plan. Hopefully I stick to it in some shape of form… !

Last night at our Uni bbq I made rissoles. Here’s the recipe:

Premium mince (about 3 big hand fulls), 1 egg, bbq sauce, 1 spring onion- chopped, moroccan spices, herb and garlic spices, breadcrumbs, 1 grated carrot.

So I just mixed all of these together with my hands. Alex said that they were a little crumbly on the bbq. So maybe less carrot would have joined it together more.

For dessert I also made a baked apple treat. It was really simple, and quite healthy.

Just halve a green apple, and cook it in the microwave (in a microwave container, with a little bit of water) till it’s soft. Then just put it on a oven tray, and spoon on some sour cream, and then sprinkle over some sugar, and some cinnamon or nutmeg, or mixed spice (or all).

You will know that it’s done because the sour cream will firm up, and colour to a yellowy colour (because the sugar is caramelising it). You are only really cooking the sour cream, because the apples would have been basically cooked in the microwave.

Wednesday: Uni bbq- so rissoles with a couscous salad (am hoping to nick some sundried tomatoes from M&D for this recipe)

Thursday: mince canelloni (left overs good for lunch tomorrow)

Friday: Just me because of Les Mis- so maybe some pumpkin pizza?

Saturday: Left overs? Or some rice cakes.

Sunday: bbq fish I meant to make last week!

The menu this week is looking pretty bare.

Monday: Dinner at the Wests (the in-laws)

Tuesday: Dinner out, maybe italian?

Wednesday: Uni BBQ - Macadamia satay Kebabs and potato sald with bacon and parmesan

Thursday: Pumpkin, fetta, rocket and bacon herb and garlic wraps (Busy = Simple)

Friday: Dinner at my parents

Saturday: Dinner at a 21st

Sunday: Leftovers from Sunday lunch (chicken and cheese Jaffles most likely)

Not very exciting I know…I shall try to be less busy next week and give you a real menu plan!

So (as usual) last week’s menu didn’t go entirely to plan. I made a roast last night, which was absolutely delicious. I bought it at meat world, on wises rd. They’ve got good meat there at cheap prices. Also, on Tuesday night I stayed at M&D’s for dinner because I was doing some photoshop work for M and some website stuff for R. We had the most AMAZING mint chops from the butcher in Woombye. I would DEFINITELY recommend it (and buy twice as much as you need, because you will definitely want left overs the next day)!

So here’s this week’s menu plan:

Thursday: S&P Calamari and Kebabs with mint yoghurt.

Fri: Subway (because we have to be at Youth at 5:20 to go down to Ice Skating)

Sat: Sarah’s engagement party, so might just have some rice cakes before I go.

Sun: Stir-fry

Mon: Pasta Bake with cheesy sauce and chicken and bacon

Tues: bbq fish

Wed: Spinach Cannelloni (using this mix)

Thurs: hamburgers

Extras/ Lunch:

Blueberry muffins (- cream cheese)

I struggle with lunches. I struggle with eating healthy, yummy things. So I have to plan it out. This is just a personal thing, and it’s necessarily for everyone!

Monday: Egg sandwich

Tuesday: Left over mac and cheese

Wednesday: work lunch

Thursday: left over kebabs

Well, this is the first post in our joint eating blog! How very exciting!!

I have to say that my menu this week has not been stuck to very well, and I am feeling a little up in the air with it all. My menu works Thursday to Thursday, but seeing as tomorrow is the start of the week, hopefully I can get a bit more on track!!

I don’t think I ever even managed to post a menu plan on my old blog, THAT’s how organised my week has been!! So here’s my short menu plan for the rest of the week:

Sunday: Left over pork wontons and popcorn (well, we are still young. And besides, I have just got sick with a cold in the last hour!)

Monday: Macaroni and Cheese

Tuesday: Salt and Pepper squid with some salad

Wednesday: Kebabs (skewer type kebabs, not wraps)

Thursday: Thai beef salad (with noodles)

I know it’s a fairly simple end of the week, but I think I have to eat lots of lemon and ginger and garlic to get back to health, and I don’t want to do too much cooking while I’m under the weather- seriously not in the mood.
